The PROTECO team based its project on the requalification and enhancement of protein Pasta waste. Working with the broken pasta waste, we made a biscuit called the Ecookie. This product can be defined as innovative precisely because its production allows the reduction of the environmental impact in the food sector. Starting from protein pasta waste, Ecookie is an excellent source of protein and fiber, with a low carbohydrate content and few calories. These peculiarities of the product make it a healthy biscuit with a crumbly and cookie-like texture and also add a great advantage: eco-sustainability. Nowadays, society is becoming increasingly sensitive towards environmental issues and therefore increasingly inclined to purchase "eco-friendly" products. Ecookie is a solution to combine health and the environment, all in one biscuit.
